This is a fabulous summer salad you must try. Refreshing and sinfully tasty.


3 ears grilled or oven roasted corn, cooled, shucked, and cut from the cob
1 red and orange bell pepper seeds removed and diced
1 red onion diced
1 avacado
1cup mayonaise
1-2 tablespoons chili powder
Contija cheese
1 lime


Roast or grill corn with husks on. Let them cool, shuck, and cut kernels from cob set aside in bowl.
Dice peppers, onion, into small pieces. Add to corn.
In separate bowl add mayonnaise, chili powder, mix together, fold in crumbled Conjita cheese enough to not over power. You can substitute grated Parmesan in place of Conjita, but then that wouldn't be authentic.
Mix into cirn mixture refrigerate.
Right before serving dice avacado into bite sized pieces and fold into mixture.
Squeeze lime atop or not. Your choice.
Serve with your barbeque and Enjoy!
